(Wine Director Matt Reiser) started studying the entire small-producer-focused list of 3,000 bottles, researched every label's origin and production process, and taught himself the history of the industry. Under the restaurant's three previous directors, he had learned what to look for when blind tasting and how to educate customers. Being on his own forced him to understand every element of the business. But he's not a snob. “You'll never catch me correcting a pronunciation or garrulously babbling about esoteric specifics,” he says. “At the end of the day, it's just wine, after all.” (read

“In Cambridge, MA – 8 p.m. –
Leopard Below, Mirror Above. Even after the buzz about the Soiree
Room at UpStairs on the Square, which opened two years ago (91 Winthrop
Street, 617-864-1933) dies down, the décor will be reason enough
to visit. Begin your gawking at the leopard-print carpet and work
your way up along the walls, handpainted à la Klimt, and punctuated
by huge porthole windows. Finish at the gilded mirror ceiling. Somehow
it all adds up to whimsical charm. The food, like the pan-roasted
duck foie gras with honey gastrique ($19), can be as luxe as the furnishings,
but even the humblest dishes are well tended. A simple romaine salad
with sheep's milk feta, olives and orange tomatoes ($12) is astonishingly
vivid.” |

“It's an invitation
you can't refuse. Regis' cooking is as passionate as it is imaginative.
If food can be said to fly off the plate with sheer exuberance then
Regis' food is up, up and away out of this world.”
